HAZELNUT OATMEAL COOKIES




INGREDIENTS
  • 2 cups of walnuts 
  • 1 1/2 cups of oat flour (if you don't have oat flour use a food processor to rolled oats until powdery)
  • 1 tablespoon of baking powder 
  • 3/4 teaspoon of salt
  • 1/4 cup of oil 
  • 3/4 cup of sugar 
  • 1/2 cup of almond milk 
  • 1 tablespoon of vanilla extract 
Additional ingredients for texture and toppings:
  • 1 3/4 cups of rolled oats 
  • 1/2 cup of chopped walnuts 
  • 1/4 cup of coconut 

INSTRUCTIONS
  1. Preheat oven to 350 F.
  2. Grind the walnuts on a food processor until they have the consistency of natural peanut butter.
  3. In a medium mixing bowl, stir together the oat flour, baking powder and salt. 
  4. Transfer the walnut butter to a large mixing bowl. Add the oil, sugar, milk and vanilla. Beat with a large spoon or electric hand mixer until well combined.
  5. Transfer the mix from the medium bowl to the larger bowl.
  6. Fold in the oats, walnuts and coconut. 
  7. Form into 1" balls and place 3" apart. Do not press the balls down. 
  8. Bake for 10 minutes or until the center of the cookies no longer appear wet. They should have formed a light crust.  If they brown, they're over baked and will be cakey instead of chewy.
